Easy rice with dried tomatoes and mushrooms

Dinner time is usually solved with a salad or a sandwich. In my case, and with my accelerated metabolism, that kind of options are absolutely discarded. I like to have a full dinner, they used me that way since I was little.

Then I have to be creative at night. In many cases I plan the dinners from early, in other cases, like this recipe, I improvise with what I find.

The result? a "stewed rice" with mushrooms, dried tomatoes and chicken breast as main ingredients.

Easy rice with dried tomatoes and mushrooms

Ingredients

  • 2 cups of cooked white rice (if from the previous day, better)
  • 1 chicken breast, chopped into strips
  • 1/2 diced onion
  • 1 clove of garlic
  • 4 mushrooms chopped into slices
  • 2 or 3 dried tomatoes, chopped into thin strips
  • 1 teaspoon of tomato paste
  • A handful of cooked green peas
  • Salt
  • Pepper

Preparation

  1. Sauté the onion, garlic and dried tomato in a pot or deep frying pan.
  2. Add the chicken breast and cook for about 5 minutes.
  3. Now it's the turn of the green peas and the mushrooms.
  4. Put the teaspoon of pasta tomato. Mix everything very well another couple of minutes more.
  5. Add salt and pepper if necessary.
  6. Add the rice and stir until it turns a reddish color like in the photo.

  8. Let stand a couple of minutes and serve.
